Holiday Chopped Salad

Ingredients

  • 2 Romaine Heads, chopped
  • 2 cups spinach leaves, chopped
  • ¾ cup chopped celery
  • ¾ cup chopped carrots (tricolor)
  • ¾ cup chopped red grapes
  • ½ cup dried cranberries
  • ½ cup chopped pecans

Dressing:

  • 3 Tbsp. lemon juice
  • 2 Tbsp. maple syrup
  • 2 tsp. Dijon mustard
  • ¼ cup extra virgin olive oil
  • Salt and pepper, to taste

Directions

  1. Toss all salad ingredients together in a large bowl.
  2. Combine all dressing ingredients in a dressing shaker and shake well.
  3. Drizzle dressing over salad and toss to combine.
