Holiday Chopped Salad
Ingredients
- 2 Romaine Heads, chopped
- 2 cups spinach leaves, chopped
- ¾ cup chopped celery
- ¾ cup chopped carrots (tricolor)
- ¾ cup chopped red grapes
- ½ cup dried cranberries
- ½ cup chopped pecans
Dressing:
- 3 Tbsp. lemon juice
- 2 Tbsp. maple syrup
- 2 tsp. Dijon mustard
- ¼ cup extra virgin olive oil
- Salt and pepper, to taste
Directions
- Toss all salad ingredients together in a large bowl.
- Combine all dressing ingredients in a dressing shaker and shake well.
- Drizzle dressing over salad and toss to combine.
