Taco Salad in a Jar
Ingredients
- Salsa
- Lettuce – cleaned and cut (Try spinach or spring mix if you’re looking for more fiber)
- Tomatoes – cleaned and quartered
- Black Beans – drained and rinsed
- Canned corn – drained and rinsed
- Taco Meat – your choice of shredded chicken, ground turkey, lean ground beef or extra beans for a vegetarian option
- Cheese – Reduced fat shredded
- Tortilla Strips or Corn Chips
- Mason Jar
Directions
- Cook taco meat
- Cut lettuce and tomatoes
- Drain beans
- Layer ingredients – salsa, lettuce, tomatoes, black beans, corn salsa, taco meat, cheese and tortilla strips
- Add lid to jar
- Store in refrigerator until serving
